Description

Enjoy this tangy, savory Armenian dish that can be served warm or room temperature. It can be served as a side dish, but my family enjoys it as a meal.

  1. Chop onion and peppers into a small dice or pulse them in a food processor.
  2. Heat oil in a large saute pan over medium heat and add diced onions and bell peppers, saute 5-10 minutes until the vegetables are tender.
  3. Add diced tomatoes, tomato paste, pepper paste, fresh mint (or dry mint) and the juice of the 2 lemons with one cup of water.
  4. Bring to a boil and add salt, lower the heat and cook for 10 minutes.
  5. Add the bulgur, remove from heat, cover the pan and let it sit until liquid is absorbed and bulgur is tender (about 1/2 hour).
  6. Stir in chopped parsley, green onions.
  7. Can be eaten immediately, within a couple hours, or refrigerate and eat later.

Notes

  • Serve with Romaine lettuce, pitta bread or pitta chips.
