Description
Enjoy this tangy, savory Armenian dish that can be served warm or room temperature. It can be served as a side dish, but my family enjoys it as a meal.
Ingredients
Instructions
- Chop onion and peppers into a small dice or pulse them in a food processor.
- Heat oil in a large saute pan over medium heat and add diced onions and bell peppers, saute 5-10 minutes until the vegetables are tender.
- Add diced tomatoes, tomato paste, pepper paste, fresh mint (or dry mint) and the juice of the 2 lemons with one cup of water.
- Bring to a boil and add salt, lower the heat and cook for 10 minutes.
- Add the bulgur, remove from heat, cover the pan and let it sit until liquid is absorbed and bulgur is tender (about 1/2 hour).
- Stir in chopped parsley, green onions.
- Can be eaten immediately, within a couple hours, or refrigerate and eat later.
Notes
- Serve with Romaine lettuce, pitta bread or pitta chips.
